Tapas Tuesday: Sweet Tomato Salad

Sarah's Sweet Tomato Salad

5 heirloom tomatoes sliced
1/2 cup balsamic vinegar
5-6 tablespoons of cane sugar or honey
1/3 cup olive oil
Very large handful of basil chopped roughly
Feta cheese
Slice tomatoes and sprinkle with fresh basil. Place in large bowl. Mix together vinegar, sugar, and oil until sugar is almost dissolved. Pour over tomatoes and give it a quick stir. Marinate 2-3 hours in refrigerator. Before serving, sprinkle with feta. Enjoy!


We had this at our 3rd of July cook-out last night and it was delicious! It is a very refreshing dish, especially when it is hot outside!
