Tapas Tuesday: Bacon Tomato Cups
My sister Christie's Bacon Tomato Cups are ridiculously delicious. Everyone (literally everyone) asks for the recipe every time she cooks them for a party. Here is her simple recipe for an appetizer that's a real crowd pleaser!
Ingredients:
1 Can Diced Tomatoes & Green Chilis Drained (Rotel)
1/2 Cup Mayonnaise
1 Cup Grated Swiss Cheese
3 Tablespoons Chopped Basil
8 Slices of Bacon Cooked & Crumbled
2 Boxes of 15 Athens Fillo Cups ($2 each in the frozen section near frozen fruit)
Cook:
Mix the first 5 ingredients together and spoon into fillo cups. Bake at 350 degree for 10-15 minutes until golden brown. Serve hot!
* Can freeze for up to 2 months in container.
